I love a good Frittata, they are super simple to make and they always get devoured by the kids! I love this one because I am a sucker for Blue Cheese and the kids really aren’t….luckily they don’t seem to notice it in this recipe so it’s a win/win!
To make your own you will need:
12 small baby potatoes – cooked and sliced
2 tsp rosemary leaves
6 eggs
1 1/2 cups of pouring cream
100g blue cheese, chopped into chunks
Salt & pepper to season
Step 1
Pre heat oven to 160 degrees (celcius)
Step 2
Place the potato, rosemary, salt & pepper into a round 2 litre capacity baking dish
Step 3
Whisk the eggs and cream and pour over potato mixture
Step 4
Dot with the blue cheese chunks
Step 5
Bake for 25 – 30 minutes or until eggs are set and golden brown.
Serve with crusty bread and a side salad
This makes for a delicious dinner or lunch, great for picnics, play dates and it’s fantastic cold the next day in the kids lunchbox! You could even bake this in a square tin and cut into squares for some delicious party food snacks!
