Chickpea & Mango Chicken Balls

Yummy Chickpea & Mango Chicken Balls - Kid approved snack!

These Chickpea & Mango Chicken Balls are sweet with a mild curry flavour – they’re absolutely delicious! We discovered at a recent party that they are a HUGE hit with all my family and friends too!

I adapted the original recipe from Edgell to include some extra veggies and made them into snack sized balls instead of burgers – they would make great burgers though too!

Ingredients-

  • 400g Can of Chickpeas (drained, rinsed & roughly chopped)
  • 500g Chicken Mince
  • 1 small Carrot (grated with excess moisture squeezed out)
  • 1 small Zucchini (grated with excess moisture squeezed out)
  • 2 heaped tablespoons of Mango Chutney
  • 2 spring onions (finely chopped)
  • 2 teaspoons of Curry Powder
  • Spray Olive Oil
  • Extra Mango Chutney to glaze and also serve as a dip on the side .

Method –

Throw everything (minus the spray oil and extra dipping Chutney) into a bowl and combine using your hands – don’t over-mix it or it will get too mushy. My kitchen helper (Miss 5) did this for me.

*Tip wearing a pair of kitchen gloves will stop your hands from getting that ‘fake tan look’ from the curry powder ;). I also like my daughter to use them when we prepare raw chicken.

We then used one heaped tablespoon of the mixture to roll into balls and placed them evenly on a baking tray. Bake at 200c  for 15min, remove them and paint some extra chutney on as a glaze before returning them to cook for a further 5mins.

I was lucky to place three in the fridge to try in Miss M’s lunchbox the next day – I was lucky because if I hadn’t hidden them away there wouldn’t have been any left!! Miss M thoroughly enjoyed her Chicken Ball snack the next day :).

  1. I am going to try these for my twins 5th birthday. Do they need to be served warm. Or is this something that can be made in advance.

    1. Hi Christine, You can make them in advance and even freeze them before cooking (allow extra 10mins cooking time) OR you can serve them colds too :).
