After the huge success of the Chicken Balls we made recently we thought we would try the same mixture wrapped into some pastry – WOW!! These Healthy Chicken, Chickpea & Mango Sausage Rolls are super YUMMY for not just the kids but the adults will love them too! Ingredients-
- 400g Can of Chickpeas (drained, rinsed & roughly chopped)
- 500g Chicken Mince
- 1 small Carrot (grated with excess moisture squeezed out)
- 1 small Zucchini (grated with excess moisture squeezed out)
- 2 heaped tablespoons of Mango Chutney
- 2 spring onions (finely chopped)
- 2 teaspoons of Curry Powder
- 6 sheets of ready made puff pastry
- 2 tablespoons of melted butter
- Extra Mango Chutney to serve as a dip on the side .
Method – Throw everything (minus the extra dipping Chutney) into a bowl and combine using your hands – don’t over-mix it or it will get too mushy. My kitchen helper (Miss 5) did this for me. *Tip wearing a pair of kitchen gloves will stop your hands from getting that ‘fake tan look’ from the curry powder ;). I also like my daughter to use them when we prepare raw chicken.
Cut down the middle of each pastry sheet as pictured, place a log of the mixture down the center lengthwise, wet your finger with some water and run along the join then roll them into a long log. Cut into the sized rolls you desire and make some slits in the top to allow the steam to escape. Brush with melted butter before placing in the pre-heated oven for 20mins or until golden brown and cooked through.
These make a great party food served with some chutney to dip into OR you could serve it as a main with a lovely fresh salad. Enjoy. Made these with turkey mince as there was no chicken, and used haricot beans as I was out of chick peas, and Chinese curry powder as didn’t have standard curry powder. Delicious!!
Would you freeze before you baked them but after you rolled them in puff pastry dough?
