Healthy Roast Vegetable Salad – using the Philips Airfryer

Christmas is fast approaching, along with it are multiple ‘bring a plate’ parties and social gatherings, as well as generally HOT summer temperatures which often leave you craving something filling and chilled. Today we’re sharing a favourite salad recipe of ours that can be easily (and quickly) made ahead of time using the Philips Airfryer. This recipe is full of flavour and sure to please the entire family.

Before we get stuck into the recipe, lets take a minute to talk about the Philips Airfryer and why we LOVE having it as part of our family’s ‘must have’ appliance list.

The Philips Airfryer produces some YUMMY dishes whilst requiring far lass oil than using a traditional deep fryer (using up to 80% less fat). It’s also far more versatile, allowing you to not just fry but also grill, bake & roast! It’s also cut the cooking time in all of our roasting, allowing us more time to have fun with the family and less time sweating next to a hot oven! One of our favourite features is that it requires no pre-heating, this is great for those occasions when you’re late home and need to whip something up quickly.

I’ve used it to make THE BEST chips at home, even better than the ones from our local fish and chip shop! There are literally thousands upon  thousands of recipes that can be made in this! There’s even an app to help you find recipes and information about the features of this awesome product.

HEALTHY CHILLED ROAST VEGGIE SALAD

Ingredients –

  • 1 medium Sweet Potato
  • Red and yellow capsicum
  • 1 red onion
  • 4 small chat potatoes
  • 250g cherry tomatoes
  • 300g bag of mixed salad leaves
  • Juice of 2 lemons
  • 2 tbs of chopped capers
  • 1 teaspoon of cumin
  • bunch fresh parsley
  • Avocado
  • 1 tbs olive oil
  • salt and pepper to taste
  • 1 tin of Chickpeas with 1 teaspoon of mustard powder

Method –

Roughly chop all the vegetables and lightly season with a little salt, pepper and throw them in the basket and cook for 25mins at 200c, remove and shake the basket midway through. Once the vegetables are cooked place them in the fridge to cool overnight.

Simply toss your vegetable mixture in some fresh rocket and then prepare the dressing by mashing the avocado and mixing in the oil, lemon juice, chopped parsley, capers and cumin. Toss the salad and enjoy!
