Fluffy Strawberry Mousse

These were an absolute hit at my daughters My Little Pony High Tea! They are simple to make and taste absolutely divine!

To make your own you will need:

400 ml of whipping cream

400g of fresh strawberries

1 tbs of Icing Sugar

4 Teaspoons of Gelatin Powder

2 Tbs of water

Method

Step 1

In a small bowl add a tablespoon of water and the gelatine. Mix well. Place in the microwave for 10 or so seconds until dissolved. Mix well again

Step 2

Wash the strawberries and cut of their green tops. Puree then add the gelatin mixture. Mix well.

Step 3

Add the Icing Sugar (note: check the flavour of your strawberries as you do this – some are very sweet)

Step 4

Whip the cream until soft peaks form. Then fold in to the strawberry mix.

Step 5

Dollop your mixture into your containers (I used teeny cocktail glasses but you can use whatever you like)

Step 6

Cover in plastic wrap and let it set in the fridge for at least 4 hours! YUMMY!
