Here’s a super EASY dish that can be prepared and made in under 30mins! It tastes great too!
Ingredients –
- 2 Chorizo sausages (approx 200g)
- 800gm of Cherry Tomatoes
- 3 cloves of garlic
- 1 large brown onion
- 1/2 tablespoon of raw sugar
- 1 tablespoon of dried Italian herb mix or dried oregano
- 3/4 cup of crated parmesan cheese
- 2 tablespoons of balsamic vinegar
- Salt and pepper (to taste)
- 200g Spaghetti
Method –
Pre-heat oven to 180c. Cook spaghetti as per packet directions. Place the tomatoes, finely chopped onion, crushed garlic into a large baking dish and sprinkle with sugar and spices. Drizzle with balsamic vinegar and then top with sliced chorizo. Bake for 20mins or until the tomatoes are soft and the chorizo is a little crispy and cooked through. Here comes the fun part – smash and squash the tomatoes (removing the stalks) and mix well with the cooked spaghetti and parmesan cheese. Dinner is served! *note I never add any oil as the oil that comes from the chorizo is enough.
