This is a salad that I made with my 6yr old daughter’s tastes in mind…she loves Parsley, Cucumber, Lime and Chickpeas! She will eat huge bunches or parsley straight from our garden! Do your children love parsley? This Quinoa and Chickpea Salad has proved to be a big hit with everyone in my family – including Master 2!
Ingredients –
- 4 cups of fresh Parsley
- 1 400g tin of Chickpeas (strained & rinsed)
- 1 cup of Quinoa
- 2 cups of stock (chicken or veggie works great)
- Half a cucumber
- Half a red onion
- 3 tablespoons of dried sultanas
Dressing –
- 1/4 cup of Olive Oil
- 1/4 cup of Lime Juice
- 1/4 cup of Apple Cider Vinegar
- 2 tablespoons of honey
- 1/4 teaspoon of Cumin
Method –
Bring your stock to the boil and add your Quinoa, gently simmer until all the liquid has absorbed then allow to cool (I usually spread it onto a plate and place it covered on an empty shelf in our refrigerator). Whilst you wait for the Quinoa to cool you can start to finely chop your parsley, onion & cucumber and set aside. Place all your dressing ingredients into a cup and whisk until combined. Then throw everything into a big bowl and mix…done!
My daughter loves this salad for lunch and that’s where the leftovers go – straight into the school lunchbox!
