4 x raw Moreton Bay Bugs
The juice & rind of 1 large lemon
80g of butter
1/2 cup of pistachio nuts
1 table spoon of flat leaf parsley leaves
sea salt & black pepper
Place the pistachio nuts, butter, parsley, lemon juice & salt & pepper into a food processor or stick mixer.
Mix until you form a chunky paste
Spread this mixture over the bugs
Add the lemon rind to the top
Place the bugs under a medium grill for 7 – 8 minutes or until the bug is cooked through
Serve with salad, rice or hot crusty bread!
