My ‘Mamma’ has been making this delicious recipe ever since I can remember. You know those special childhood meals that you really enjoyed and want to carry on the tradition for your kids? Well this is one of those for me and I wanted to share it with you!
It’s so easy to make and so extremely tasty. The kids love the little ‘surprise’ in the middle when they cut open their meatball and oozy cheese comes out! Mmmmm!
You will need:
500gms of mince (we use heart smart/lean mince)
2 x 400g cans of tomato soup
1/2 bunch parsley chopped
200gms cheese cut into cubes (mozzarella works best, but cheddar, tasty any cheese will work fine)
1 cup cooked rice (we use long grain)
salad to serve
Directions:
Pre-heat the oven to 180 degrees (celcius)
Step 1
Cook rice according to packet directions and let cool
Step 2
Add your mince to a large bowl and add the cooked rice & half of the parsley and mix well
Step 3
Roll the mixture into palm size balls
Step 4
Flatten your meatball and add a cube of cheese to the middle. Once added, complete rolling your meatball into a ball shape.
Step 5
Add one can of the tomato soup to the bottom of a greased oven dish
Step 6
Add all of your cheesed up meatballs to the oven dish
Step 7
Cover with the remaining can of tomato soup
Step 8
Garnish with a little of the parsley
Step 9
Bake for 30 minutes or until cooked through
Step 10
Serve with a lovely garden salad – it’s also yummy served with garlic bread

These look great. I have tried a similar that the kids really enjoyed before but I have tried putting cheese in the middle. My two boys would love that 🙂
Inthe US, would tomato sauce be the equivalent of the tomato soup called for in the recipe? Looks delicious, can’t wait to try it!

No the soup really is the best taste
Do they freeze well? Just add soup when you’re ready to cook?
