This healthy Prawn Stir-Fry is one of my family’s favourite meals! The seafood can be easily swapped out with chicken and you can add as many veggies as you like (it’s a fantastic vegetarian dish too). It’s one of those recipes that I prepare knowing that everyone in my household will devour it without complaint.
Ingredients –
- 2 large carrots
- 1 large red onion
- 1 bunch of broccolini or half a head of broccoli
- Half a red capsicum
- 1 tablespoon of vegetable oil
- Thumb size of fresh ginger (peeled and grated)
- 1/4 cup of Kecap Manis (sweet soy sauce)
- 2 tablespoons of light soy sauce
- 1 cup of salt reduced chicken stock (or Veggie stock for vegetarian)
- 500g of peeled raw prawns (or sliced chicken breast)
- 220g fresh egg noodles (you may prefer to serve this with rice or any type of noodle)
Method –
Heat your wok or fry-pan to a high heat, add your oil and then stir-fry all the vegetables until just soft . Remove the veggies while you stir-fry your prawns for aprox 2 mins (they should be just cooked through), throw everything else into the wok including the veggies, stock, soy sauce, Kecap Manis, ginger and stir-fry for a further 1 minute. I sometimes serve this with a fresh wedge of lime.
