I had a ball preparing for my little girl’s 3rd Birthday Party! She was adamant on a Rainbow Theme so that is exactly what we did! There is no such thing as a party without cookies, so of course, we had to make Rainbow Cookies…with a twist, these delicious biscuits include Jelly crystals! Whaaaaaatt!
To make your own you will need:
- 3.5 cups flour
- 1 tsp baking powder
- 1.5 cups salted butter softened
- 1 cup sugar
- 1 egg
- 1 tsp vanilla
- 4 pkt jelly – any colours you like!
Method
Beat butter in large bowl with mixer until creamy. Add sugar and beat until light and fluffy. Add egg and vanilla. Mix flour and baking powder in a separate bowl. Gradually beat in flour mixture.
Divide dough into 4 sections. Sprinkle 2 tbs of jelly onto each section. Knead together with dough. You may want to add a few drops of food colouring to make the dough more vibrant.
Shape dough into small balls. Add the extra jelly crystals into bowls & roll the balls in it.
Place, 2 inches apart, on baking sheets.
Flatten with bottom of bowl.
Bake for 8 to 10 min at 180 degrees on lined baking trays.
When cooked, cool on baking trays for a few minutes then remove to wire racks to allow to cool completely!

i am just wondering if this recipe would be a decent consistency for using cutters into the number 3 or if they would break and crumble???

It should be fine to use with cutters – just dust them with a little powdered sugar before using them (the cutters). Louise x
