After retuning home from Playgroup to discover we had no fresh bread I decided to whip these up – I had forgotten how much Miss M enjoyed them. We used what we had in the fridge and pantry but you can do whatever flavour combo you like.
Mini Quiche Recipe –
1 x12 muffin tin (we used a silicon one)
3 sheets of ready rolled puff pastry
Butter for greasing
6 eggs
Dash of cream or Milk
Pinch salt & pepper
100g shaved ham
100g tin corn (strained)
1 cup grated cheese
Using an egg ring, glass or pastry cutter, cut circles out of the defrosted puff pastry and place into the greased muffin tray.
Then fill with ham, cheese, corn and pour over lightly beaten egg mixture.
Bake in a preheated oven 200c for 30-35min. The pastry should be golden brown and the egg mixture set in the middle.
Enjoy these hot or cold.
We used a letter ‘M’ cutter to place on top of the ‘pies’ using the leftover pastry – Miss M loved that!!
They are terrific in a school lunch box or served at parties too. Enjoy!
What a great site! I want to try making your many lunch box snacks for my 90 year old Mother-in-law. She’s partially blind, so her cooking options are limited. I’d already made her meatloaf muffins, using the famous old Quaker Oats recipe, so when I noticed all the similar small serving size snacks, you have on your site, I realized that all these things would also work well for seniors. I’ll be using lots of your recipes for my Mother-in-law. Thanks so much for such an abundant site full of great info! Much appreciated!
