This meal is soooo delicious and easy enough to whip up on a school night too!
To make your own you will need:
6 small chicken breasts
6 thin slices of prosciutto
150g fresh mozzarella sliced into 6
400g of tomato & basil pasta sauce
1tbs olive oil
200g whole cherry tomatoes (optional)
Cracked black pepper
Fresh thyme sprigs to serve
Directions
Step 1
Preheat the oven to 200 degrees. Heat oil in a large frying pan over medium-high heat. Cook the chicken in batches for 2-3 minutes each side or until golden brown. Transfer to a plate.
Step 2
Top the chicken with a slice of mozzarella. Wrap with a piece of proscuitto around each piece of chicken. Tie with kitchen string to secure.
Step 3
Spread the pasta sauce over the base of the baking dish. Arrange the chicken over the sauce. Add cherry tomatoes (optional). Bake for 20 minutes or until the chicken is cooked through. Tuck the thyme sprigs under the string and serve!
