My kids LOVE this recipe! I love it as I can put it on in the morning and forget about it until dinner time! The small sliders are perfect for kids little mouths!
To make your own you will need:
1.5 – 2kg piece of pork shoulder (trimmed of fat)
2 tbs brown sugar
1/2 tsp ground cumin
1 tbs smoked paprika
1 tsp mustard powder
1/3 tsp ground cumin
Salt & pepper
2 tsp vegetable oil
1/3 cup apple cider vinegar
4 tbs tomato paste

Coleslaw to serve
Method
Step 1
Combine the brown sugar, cumin, paprika, mustard powder, 1 tsp salt & 1/2 tsp pepper into a small bowl
Step 2
Rub the pork shoulder in the spice mix – cover well
Step 3
Heat vegetable oil in large frying pan and cook pork until browned on all sides (approx 5 – 7 minutes). Transfer browned pork to a plate
Step 4
Add 3/4 cup of water to the frying pan to get off all of those delicious juices. Add the tomato paste, vinegar & 2 cups of water & whisk until combined. Transfer this liquid into your slow cooker
Step 5
Add the pork and cook on low for 8 hours (or 4 on fast)
Step 6
Once cooked remove your pork and place onto a chopping board
Step 7
Pour the juices from the slow cooker back into your frying pan and cook for 10 minutes or so until it’s reduced by half – add salt & pepper at this too if you like.
Step 8
Pull your beautiful slow cooked pork apart and chop roughly. Add this to a bowl and add 1 cup of the reduced cooking liquid.
Step 9
Serve on your buns with the coleslaw and BBQ sauce and devour!
