This is an absolute hit in my house. It’s delicious, it’s made in one pot AND it only takes 30 minutes!
Ingredients:
- 4 chicken breasts (skin off)
- 1/4 cup all purpose flour
- 2tbs olive oil
- 2 tbs butter
- 250mls of chicken stock
- salt and pepper to taste
- 2 lemons
- ¾ cup of cream
- ¼ cup capers
- chopped parsley (for garnish)
- 500g angel hair pasta
Method
Step 1
Heat the butter and oil in a large frying pan over medium heat.
Step 2
Season both sides of the chicken breasts and roll them in the flour
Step 3
Place the chicken breasts into the frying pan and cook for about 4 minutes on each side, or until cooked through. Remove from the pan and set aside.
Step 4
Turn the heat to medium low. Add chicken stock, juice from both lemons, heavy cream, and capers. Bring the sauce to a boil and return to medium low heat. Allow the sauce to cook for around about 3 – 4 minutes.
Step 5
Serve over cooked angel hair pasta and spoon over the sauce. Garnish with freshly chopped parsley.
