Caramel Apple Slice – perfect treat for the school lunch box!

Caramel Apple Slice Recipe

This is such a simple recipe that everyone will love! The sweet caramel and fresh apple flavours are a match made in heaven! This recipe is also perfect for cooking with kids – there are so many stages that they can observe and help with along the way!

We actually cooked this recipe LIVE on Periscope (a live video streaming app) which happens to be the same place we met the amazing ‘Chocolate Johnny’ from Perfection Chocolates in Sydney! We quickly became ‘online’ friends and were fascinated with his personality, passion and love for his family! You can read all about his 3rd generation Australian Chocolate business here.

We were since fortunate enough to meet Johnny and his beautiful wife in person on our last trip to Sydney. As soon as the cab pulled up outside his beautiful store in Sydney’s Rose Bay we were met with the lovely aroma of sweet chocolate…it took all of the children’s willpower not to eat everything in sight. We were treated to their famous Hot Chocolate – made using REAL freshly melted milk chocolate…the BEST Hot Chocolate we’ve EVER had!

We talked parenting and business with the generous family man and before we knew it it was time to catch our return flight back to Queensland! We encouraged Johnny to start his own blog because we love his parenting style and believe many people would benefit from his wisdom, generosity and compassion…we will keep you updated!

Ingredients –

Base – 
100g of unsalted butter (at room temp)
1/2 cup of Caster Sugar
1 egg
1 cup of flour
1 teaspoon of baking powder
1/2 cup of soft caramel sauce

Apple Filling –
4 large apples (we used green apples)
1 tablespoon of butter
1 teaspoon of ground cinnamon

Crumble – 
1 cup of flour
1 teaspoon of baking powder
125g of unsalted butter
1/2 cup of Castor Sugar
1/3 cup of shredded coconut (optional)

Method –
Pre-heat oven to 170 degrees Celsius.

Make the filling – peel and chop the apples before adding them to a saucepan with the butter and cinnamon, cook over medium heat until lightly cooked through and slightly caramelised. Set aside to cool.

Make the base – grease and line a standard slice tray. Cream the butter and sugar on medium speed in an electric mixer until pale and fluffy. Add the egg and mix on low speed until combined. Fold through the flour and baking powder and then spread evenly over the baking tray. Layer the cooled cooked apples over this base, pour over the Caramel Sauce and set aside.

Make the crumble (especially easy and FUN for little hands to help make) – place the flour, baking powder, butter and sugar into a bowl and using your fingers continually ‘pinch’ the mixture until it resembles breadcrumbs. Spread this mixture evenly over the top of the other two layers.

Bake in the oven for aprox 40mins. It should be a lovely even gold colour on top. It’s best served warm with some Ice Cream and a little extra of the amazing Perfection Chocolate’s Soft Caramel Sauce!! ENJOY!

This slice also makes the perfect treat for the school lunch box! It’s almost as good served chilled the following day!
