I love healthy after school snacks for the kids, but they are always asking me for lollies, chocolate or ice cream. I have found this delicious, nutritious and simple Strawberry Yoghurt recipe (which I altered slightly) and the kids go mad for it!
To make your own you will need:
4 cups of frozen strawberries (I am lucky enough to live near a strawberry farm near me, so I pick them with the kids and then freeze them…DELICIOUS!)
4 Tablespoons of honey
1/2 cup of plain yogurt
1 tablespoon of freshly squeezed lemon juice
Step 1
Add all of the ingredients into a food processor and process until it’s nice and creamy (about Process until creamy, about 5 – 6 minutes.
Step 2
Remove from the processor and serve immediately. I like to serve it atop of waffle cones for the kids!
You can store it in an airtight container in the freezer for 3 – 4 weeks or transfer it to an airtight container and store it in the freezer for up to 1 month.
This recipe is also great for kids parties – they will never know the difference I swear!
