This is such a simple recipe that is as healthy as it is delicious!
I make enough Spaghetti Bolognese mince for two nights then we have these on the second night.
4 medium zucchini (we have one per person)
Basil leaves to serve
Half the zucchinis & hollow them out
Place them on a lined baking tray and fill with the bolognese mince
Top with mozzarella cheese
Bake in a moderate over (180 degrees) for 20 – 25 minutes until golden brown
