As a busy Mum, I am always looking for delicious slow cooker meals. I have plenty of after school activities such as soccer practice, dancing and gymnastics so any chance I can get, I pop dinner on in the morning so it’s not such a rush when we get home.
This recipe is delicious and the kids love it as it has their favourite ingredient…Peanut Butter!
Ingredients
750g chicken breasts
1 can of coconut cream (250ml)
4 cloves of garlic – crushed
3/4 cup chunky peanut butter
3 tbs lime juice
2 tbs rice wine vinegar
3 tbs honey
3 tbs soy sauce
1/2 cup peanuts for garnish – chopped
Fresh Coriander for garnish – chopped
Sprinkle of chilli flakes for garnish
Rice for serving
Directions
Step 1
Place chicken breasts in the bottom of your slow cooker.
Step 2
In a separate bowl, stir together coconut cream, peanut butter, honey, garlic, soy sauce, lime juice, rice wine vinegar. Mix until well combined and pour over chicken.
Step 3
Cover and cook on low for 6 – 8 hours or high for 3 – 4 hours.
Step 4
Check the chicken is cooked through then remove and shred. Return the meat to the sauce and turn slow cooker to ‘warm’ and heat through again
Step 5
Serve over a bowl of rice and garnish with chopped peanuts, fresh coriander and a sprinkle of chilli flakes
