Healthy Chocolate Brownies – great for kids lunchboxes
When I came across this recipe via Miss 3’s Playgroup – one of the Mum’s made it & I had two pieces feeling guilty, I hunted down the ‘chef’ and was happily surprised when I found out it was Gluten Free, Grain Free, very low in Sugar & packed with Fruit….whaaaaaat!. Of course, this recipe was inspired by the amazingly talented and (my favourite chef) Jamie Oliver – there is NO going wrong with this! Behold the ‘Healthy Chocolate Brownie’ .
Ingredients
200 grams of dark baking chocolate (unsweetened)
1/2 teaspoon of baking soda
200 grams of pitted dates
200 grams of walnuts – chopped loosley
3 eggs
1/4 cup coconut oil, melted
1 tbs of vanilla extract
Method
My lovely kiddies sat on the bench & LOVED to make this, there were lots of buttons to push, lots of loud noises….and a taste test or two along the way!
Step 1
Get your food processor (I don’t mean to gloat, but I entered a Jamie Oliver giveaway a few years back & WON a food processor – I was well chuffed)…sorry I digress..
In a food processor, pulse together the chocolate and baking soda until they have the texture of coarse sand
Step 2
Add in the dates and pulse
Step 3
Add the eggs, coconut oil & vanilla essence
Step 4
Transfer this lovely jubbliness into a lined cake tin/baking dish (approximately 20 x 20 centimetres)
Step 5
Bake at 180 degrees celcius for 15 minutes
Step 6
Open the oven then quickly dot the chopped walnuts to the top of the brownie and push in a little
Step 7
Bake for a further 15 minutes
Step 8
Let it cool for one hour
Step 9
Slice into squares & serve!
I keep this in a cake tin all week & the kids devour it every day in their lunch box – I may or may not have a slice or two aswell ; )

Do you think you could use dark chocolate cocoa powder?
These were gorgeous. Made them today and my 4yr old loved them. Is it possible to use apricots instead of all dates? (Thinking of the extra iron!)

Really only 180 degrees Fahrenheit??? Does that get the brownies up to temperature enough to ensure the eggs are cooked thoroughly? Taking to an expectant mama- need to be food safe!
Hi Kimberly, It’s 180 degrees Celsius which should be around 325 Fahrenheit. We are based in Australia so we generally use Celcius – I’ve amended the blog to include that info. Thank you. Louise x

Do you use pitted dried dates or fresh medjool dates? I have been baking with the fresh dates a lot recently but I’m unsure if I should be used the dried ones instead?

I am not much into baking but i liked this recipe as it is healthy for kids but i tried this recipe 2 times it tastes good n but just wana make sure is it supposed to be fragile because it breaks easily what can be the reason for that pls help?
