Delicious Banana Bread Recipe

Banana Bread

I have been making this banana bread for years and my kids LOVE it so I thought I would share it with you all.

If your kids are like mine, they love bananas so this snack is a great treat for their lunchbox, morning tea, picnics, after school snack or any other time.
Bananas are rich in fibre and great for bowel health too. I add LSA into my banana bread (which is optional) it is a combination of ground Linseeds, Sunflower Seeds and Almonds. A great boost of protein, omega 3 fats, calcium & a bunch of vitamins which again, is very important for healthy little bodies. I get this from my local supermarket in the health food aisle – here’s a little tip that I just learnt too – store your LSA packet in the freezer once opened to prevent the healthy oils from spoiling (which can happen when exposed to light and air).
Aside from all of that though, it’s super FUN to make! Master 5 loves to mash the heck out of bananas (better he get any aggression out there ; )
Ingredients
3/4 cup wholemeal self-raising flour
1/2 cup LSA (optional)
1/2 cup self-raising flour
1 teaspoon of ground cinnamon
20g butter
1/2 cup of firmly packed brown sugar *
1 egg
1/4 cup low-fat milk
1/2 cup mashed banana (one large overripe banana will do the trick)
Honey & bananas to serve
Method
  1. Preheat oven to 200degrees (180degrees for fan forced ovens)
  2. Grease a loaf tin & line with baking paper
  3. Mix flours, cinnamon and butter in a processor or mixer until crumbly.
  4. Add sugar, egg, milk and mashed banana & mix until ingredients are just combined
  5. Pour mixture into pan
  6. Bake for approximately 40 minutes.
  7. Let it stand for 5 minutes before turning out onto a wire rack
  8. Serve with sliced banana and honey
*you can replace the sugar with 1/2 a cup of apple puree too!

YUM!! You will find yourself sneaking slices of this too…which is fine, because it’s also low in fat! Yay!

    How much LSA do you add? Do you adjust any other ingredients to keep the mix in balance? Ta 🙂

      Hi Sally, thank you for pointing that out! I forgot to add that to the ingredients list! I have now amended the blog. I use 1/2 cup. This is optional and it won’t change the consistency of the mixture too much either way to have to adjust : ) Jenni x

      Hi Sarah, LSA is ground Linseed, Sunflower Seeds & Almonds. I get mine in the health food aisle of my local grocery store, but if you can’t find it there, try a Health Food Shop…I hope this helps : ) Jenni x

    Hi, this recipe looks really great and i’d love to try it, but I don’t have a processor, only a hand mixer. Would it just be a simple, mix dry ingredients together, then add wet ingredients method, like with some cakes? Or should I amend the recipe, and rub the butter into the flours & cinnamon with fingertips, like when making scones? Thanks 🙂
